Our first of two #gourmet #pizza was made with #eggplant and #onion. The crust was perfectly cooked, chewy on the inside and a delicately crispy exterior. Then Chef Manuel explained that the #housemade sauce was made with five different types of #tomato! It was so thick and rich. The pizza slices alternated with different versions of the main ingredients: or fried eggplant and onion, or roasted eggplant and onion. Each had its own subtleties and flavors! Then in the center there was a bomb of #mushroom and #truffle paté to dip into. An amazing taste experience - truly gourmet!!
We called a day in advance to make a reservation and request vegan dishes - Chef Manuel was excited to have us and said he would make dishes based on what was available at the markets. So delicious, savory and unique!!
