if you chop them up smaller they cook quicker
we eat a lot of mash potato here easy and quick to make by chopping up small cook on the hob with dash of salt and water and allow to cook - drain add vegan butter milk seasoning and mash till the lumps have gone.

personally i thought potatoes would have a lot more fibre and more protein surprised ah well they make a good bulker and are nice with butter.
