I’m not a huge fan of lemon meringue but I took this to a family lunch and it was well received 😀
Visually stunning and with a taste so similar to ‘ordinary’ lemon meringue, you wouldn’t know it’s vegan. The lemon part was adequately sour and the meringue was marshmellowy.
