Vegan eggs Benedict:
Half an English muffin, spinach, tofu, seitan bacon, avocado and vegan hollandaise. This didn’t have a yolk but otherwise it was really tasty. The avocado was a nice addition as it adds a bit of richness & makes it extra creamy
