Mushroom. Spring Pea and Asparagus Puree, Pickled Saffron Pearls, Nori Crisps

This dish looked SO amazing. Utterly beautiful & convincing. The only drawback is that the mushroom scallop itself doesn’t have a strong or sea-like flavour. I feel they are missing a trick here.
