Calypso Southwest food cart has a variety of vegan options that offer an original spin on Southwest cuisine with lots of choices for customization, and generous portions to boot! This Sun Rice Bowl includes fluffy white rice cooked with coconut milk 🥥 , topped with super greens slaw, cilantro, and your choice of protein and sauce. The two vegan protein options are a Black Bean Sweet Potato Hash 🫘 or a Yo, Ho, Ho Coconut Rum Tofu. I always opt for the fried tofu, which comes breaded in panko breadcrumbs and shredded coconut. 😋 The vegan sauce choices include an avocado herb sauce 🥑, coconut chipotle, tahini vinaigrette, or pineapple habanero salsa. I went with the coconut chipotle sauce and it of course paired perfectly. This dish also comes with a couple fried plantains on the side! 🍌
