I really love the unique tastes that alternative flours bring to their dishes. This almond flour is sweet and nutty. When I was last in France I loved how so many of the pastries used almond flour or flavoring. I tried to make some cookies using a recipe I found on Instagram. The almond flavor came through nicely and complimented the jam, but the texture was just a bit too chewy for me. I hope to continue experimenting with almond flour to make tasty #glutenfree desserts.
Here's the recipe I found:
- 2 cups almond flour
- 1/4 cups maple syrup
- 1/4 cups coconut oil
- 2 tsp baking powder
- 1 tsp vanilla
- dash of salt
- Fruit jam for filling
- Powdered sugar for dusting (optional)
1. Combine all dough ingredients
2. Wrap dough in plastic and freeze for 10-15 minutes
3. Roll out dough to be about 2mm thick. You need to do this and the next step quickly before the coconut oil melts
4. Use a large cookie cutter to make all the cookies, use a smaller cutter to make windows on only half of the cookies
5. Bake for 5-6 minutes at 350°F
6. Assemble after they have cooled and hardened
