It's great to see more and more Tex-Mex restaurants embracing plant-based cooking and offering delicious vegan options for most of their non-vegan menu items, and this mushroom chimichanga from Cantina Bar was the perfect example of that. The deep-fried flour tortilla was perfectly crispy and the marinated mushroom filling was flavourful in all the right ways! It also came with a small side of corn chips and guacamole. Washed it all down with an ice cold Mexican larger dressed with lime wedge.
