One of my favourite combinations for a sandwich - mushrooms, avocado and spinach on toasted sourdough bread. It did need a touch more seasoning, yet it was still enjoyable. The mushrooms were fried beautifully - could possibly be more generous with those in the portion. I found myself rationing to make them last for each bite.
