
Have you ever had garlicky pasta with pinto beans and kale?? This has been a recipe I’ve made for decades but sometimes I forget about it for a while. I don’t think I’ve made it in a couple of years and now that I did, it will be back in regular rotation. It’s loaded with protein and fiber and it’s hearty and sooooo easy to make! Sauté garlic in olive oil, add kale and cook until soft, then stir in beans (if organic, use some of the liquid to make it saucier). Season with salt and pepper and I like red chili pepper flakes. Stir it into cooked pasta and serve topped with vegan parm or eat it without—doesn’t need it! Easy and yummy! #pasta #veganrecipes

i have a cousin in italy who makes pasta and chickpeas. it's very good.
