I got this meal in a restaurant overlooking the Playa Blanca bay, and though it wasn’t labelled on the menu, the waiter assured me it was it was vegan, so I really hope it was properly plant-based! It was really delicious and moreish, quite salty and I loved the sand-castle-like presentation of the rice and veggies (which included mushroom, courgette green beans, carrot, onion and pepper). There was so much I had to bring some home!
