Amazing! This carrot cake was absolutely delicious! I couldn’t believe it when I saw the word “vegan” as I was strolling past these frozen cakes at Aldi.
Carrot cake had been my absolute favorite cake long long before I was vegan or even a vegetarian. Maybe that was hinting something way back then 😉. I unfortunately had not treated myself to baking my own, or even finding a vegan version of a carrot cake until now…even though it definitely crosses my mind to have a local bakery bake me a big one whenever my birthday rolls around.
I’m so glad I picked this one up to treat myself. It was perfectly sweet, fluffy, and rich in such a great way! Carrot 🥕 flavor stood out in just the perfect amount. The cream cheese frosting was amazing as well, it was thick, creamy and super sweet. I loved it. Coconut shavings on top works really well too. For such an incredible taste, this one was surprisingly only $8. I will definitely buy this one again if I see it!
