Some kind of lentils is among my #pantryessentials. Red softens easily, which makes it a fun stew thickener when it falls apart, inconspicuously adding protein to a meal. Most recently, I made a Cozy Coconut Carnival Squash, Sweet Potato, and Red Lentil Stew with greens and spicy homegrown chiles. Yum! #veganisnotscary
