What a fabulous vegan option. Choice of Hot Udon or Soba noodles in a light vegetable broth . I had udon noodles. Flavorful vegetable noodle broth. Filled with melt in the mouth tofu, spring onion, corn, spinach and bak Choi. Brimming with flavour and taste. Was very surprised at how good it was. Paired it with some edamame beans. Yum
