Bagel topped with spinach, mushrooms, tofu and vegan hollandaise. Nice to have different options for a vegan breakfast but personally I found the sauce very rich and couldn't finish it all. Spinach, mushrooms and crispy tofu were all lovely though.

THIS LOOKS PERFECT OMG!😍🤤😭 I'm a huge fan of a big breakfast! Was tofu used "in replacement" of scrambled eggs?
