Panko breaded avocado, refried beans (I feel like they’re so underrated/often forgotten, but I LOVE them!), pico de gallo and sour cream in that soft corn tortilla. I was pleasantly surprised that the avocado hadn’t turned into a warm mush and had held up beautifully. A must-try!
