This is one of the most rewarding meals I've ever had. Growing up, I had a lot of South Indian food and this vegetarian restaurant has hit the most to the taste in Singapore. Pongal is a lentil and rice porridge and vada is a fried doughnut, made using a fermented lentil and rice batter. They served this with the classic sides of sambar and coconut chutney. It was super delightful, scrumptious and for S$5.9, it was worth it! The vada wasn't too oily and soaked up the sambar right away. The pongal paired amazing with the chutney. A very healthy meal overall with the spices, the lentils, fermented batter and chutney. I definitely look forward to more at this restaurant.
A lot of South Indian food is already vegan. The simplest trick is to skip ghee and you're done. Another tip is to check for curd being used to better the texture.
