Orzo

Vegan Avgolemono (Greek Lemon Orzo Soup) is my new favorite soup to make! Recipe at the bottom of this post. It’s perfect for spring, with a bright lemony flavor and fresh herbs (dill is the star 🤩). Super easy and features orzo to make it a little more hearty. Let me know if you try it out! This orzo is great for soups or pasta salads and cooks quickly. Nice to have in the pantry and it’s inexpensive. I could probably make four batches of soup from this one box! Linking the soup recipe below. Love this for salads & soups. A lot of recipes call for just one cup so it’s nice to get 2 different meals from one box. I used this in Greek “Meatballs” with Lemon Orzo Salad by Eat Figs, Not Pigs 👍🏼👍🏼

But this link brings you to their recipe page and should be able to type in ‘orzo pesto salad’ 😊) The texture was amazing, and the flavors were lovely! For the pesto (link in the ingredients section), I used #spinach instead of basil and used a little bit of fresh #parsley, instead of pine nuts I used #almonds. I also used flax seed oil instead of olive oil. I also added in some #oregano. For the main dish, I did not include the olives or spinach (I felt a bit lazy there toward the end 😅). I used this recently for a recipe. I wanted to try something different than the regular type of pasta. It was my first time eating Orzo. I really liked it.

Had never had orzo until I became vegan and started exploring and experimenting. It’s a “fun” food., one that has lots of possibilities with a little imagination. A nice alternative to other pastas or rice and it’s much quicker cooking than rice. I like to use it in Mediterranean style bowls, salads, and soups.
