So delicious! I ate it straight out of the can, but it would probably also taste good on bread. I didn’t warm it up, but apparently it can be eaten warm. Reminded me of moussaka a lot. Perfect to take with you to work or school as a quick lunch. Only $2.99 at Trader Joe’s.

Reminded me of eggplant caponata so I really enjoyed it. I toasted up some bread and put this on top so I cut the eggplant chunks a bit more. Slightly oily but good flavor.

Yum! Really tasty mix of eggplant, tomatoes, and onion. Great on some crackers or on a slice of bread. Would totally eat this again:)

Quick and easy meal that is very satisfying. Definitely would recommend.
