Mole is such a treat for me. I didn’t know about it growing up, so
discovering as an adult that chocolate could be used in dinner, not just dessert was the best.
This mole negro includes tomato 🍅, tomatillo, jalapeño 🌶, onion, peanut butter 🥜, fig, garlic 🧄, cocoa 🍫, sesame, pumpkin 🎃, ancho, and a variety of spices. It’s this amalgamation of so many flavors that make it complex and interesting. This also has sugar added, FYI. I would also say it tasted mild, not medium.
I smothered tempeh in the sauce, then added some fresh peppers and delivered them to my face in some mini tacos. Yum. The chocolate came through a little better 🤤 when it wasn’t competing with the taste of the tempeh.
