Yam Fried Rice

I have to begin on a rather sad note. Simply Good Food is closing its doors for good on the 31st of this month 😥 Back in the day before all this stuff was cool, they were one of my go-to places where I knew I wouldn't have to endlessly define the v-word. Over time they have been well and truly supplanted in my pecking order of favourites (and yes, I have seen this coming for some time because they're always empty), but seeing the confirmation of this on the socials still made me a little bit sad 😐 This #yam #friedrice was very typical of their approach. Heavy reliance on a single ingredient, and then a supporting cast of rather healthy ingredients. Not at all greasy, with the mushroom cubes providing a nice counterpoint to the texture of the yam. One of their better dishes, sad that I will never have this again ☹️
