We also tried a #vegan Veggie Pita. Meaning no faux meat, just hummus and fill-ins! We got the sundried tomato hummus, which was fantastic! It has such a nice tomato flavor, and I loved the herbs and spices. I also added lebase cauliflower, which had a great texture and taste. It was fried, so it's not super healthy, but it does have turmeric, which is good for inflammation? Give and take a bit, right?!🤣 I also filled the pita with tabouleh salad, cabbage, cucumber, and lettuce. The real show stopper was the Spanish eggplant! It was smoky, creamy, and even tangy. It was saucy and had garlic, vinegarette, and olive oil. It was delicious! Some of the pieces were a bit big, so it made the texture a little funny, but the majority of it was fantastic. It was really unique, and I would have never thought to add that to a sandwich.
