Vegetarian Pho

I named the dish vegetarian because there isn't a specific dish called "vegan pho", but this is a vegan review. I did the build your own with vegetarian broth and double crispy tofu as a protein. When I went vegan I was afraid I would lose out on my culture and couldn't possibly eat anymore authentic Vietnamese food. I went into this honestly thinking that I would be disappointed, but this dish literally blew me away. I have had some amazing pho in my life so it's not fair to compare it to beef pho, but as a vegan pho alone, this is phenomenal. All of the flavors are there and it hit me with nostalgia, if this place had mock meats this may be in competition with real pho. The tofu was SUPER good and the pho was really authentic and filling. I loved this dish so much and if you are Vietnamese and vegan, this will make you genuinely happy
