This sushi bowl was offered every Friday, and I would get it almost every week without fail - I just couldn’t get enough! The bowl has sushi rice topped with Japanese cucumber, seaweed salad, pickled daikon, edamame, sliced avocado, shredded nori, and roasted sesame seeds. I mean, just hearing all the ingredients makes my mouth water. The Vegetable Sushi Bowl actually isn’t vegan originally, since they put spicy mayo on top, but I would always just ask for it without the mayo, making the dish 100% vegan! UCLA is super friendly about meal substitutes, making it extremely easy to turn any non-vegan dish vegan just by asking for one thing to be removed.
