Veganized Bento Box 🍱

Went there for the company lunch and honestly it’s probably the best vegan Japanese food I’ve ever tasted. The 🍱 is quite large and consists of: - Miso soup: well balanced, not too salty and with precisely measured 3 cubes of tofu - deep fried eggplant 🍆 pieces with a sour and spicy sauce - a vegan version of agedashi tofu but also apparently grilled. This was my favourite! Also came with a green chilli and unexpectedly, an apricot - sesame rice with pickled vegetables. Simple but delicious - truffle avocado salad with crispy ginger bits - sushi set: avocado and cucumber maki, but with shiso leaf, which added a zesty note; alfalfa and shiitake nigiri, and inari Not pictured here: sake aged to classical music 🎶 🎻 🍶 🪈🎺 🎵

⭐️⭐️⭐️⭐️⭐️ Wow! Exceptional! So Nobu is one of the world’s most famous Japanese restaurants… Robert De Niro is a part owner and the chef, Nobu Matsuhisa, is probably one of the best Japanese chefs anywhere. It’s a restaurant I’ve been to many times in NYC. 20 years ago there was basically nothing I could eat. They’d make me avocado rolls and veggie tempura. But oh how times have changed! I was attending a conference last week in a hotel in Singapore which has the country’s only Nobu and so I popped in with @mrsgarg for lunch. They have a bento box 🍱 special on the menu and I thought I’d dare to ask if they could make it vegan. The hostess said she’s never been asked that but would ask the chefs. And viola, this is what they prepared! It was honestly a feast of incredibly prepared Japanese food, and so much more than I could handle for lunch but I ate everything! What were my favorites? Believe it or not, the spinach and avocado salad was incredible. It had this very umami crunchy powder sprinkled all over and crispy slivered ginger which made the salad delicious! The rice with pickled veggies and the tofu were also incredible, as was pretty much everything else! The world is changing! This wouldn’t have been possible 10 or 20 years ago or even 5 years ago.
