Vegan Summer Ramen

Fantastic! I am a huge ramen fan, but I had never tried summer ramen before. It was perfectly refreshing, while still very savory and filling. The tofu was a tad spongy, but soaked up the flavour of the broth nicely. I wish they had this year-round!
