Vegan Papri Chaat

Wow this is seriously such a fun dish! This is a beautiful fusion of Indian flavors in a nacho-like presentation. The "chips" are similar to puri and hold all the fun toppings well. They are topped with chickpeas, potato, cucumber, and tomato which make a lovely mixture with mint similar to a pico de gallo. Tamarind chutney is then drizzled over the whole thing. To make this vegan you need to remove the yogurt.
