Vegan Nachos

I've known about Stanley's and their wide vegan offerings for a while now. Trying their Vegan Chef Challenge entry was a good excuse to go at the end of August! These nachos aren't the entry, but they were a great starter! I've had the vegan nachos years ago at The Howe and loved them. The Howe and Stanley's have the same owners, so I knew I could trust the nachos here to be good! They used a cashew queso and some kind of plant based chorizo. I really enjoyed the chorizo. It has a nice kick to it that built up with this dish. The guacamole is a nice touch too. Like most nachos, the downside is that there are some very loaded chips and some very bare chips.
