This majestic salad is crowned with lion's mane mushrooms slowly roasted and seasoned to resemble the tenderest brisket, on a bed of curated lettuce leaves, quinoa, multicolored tiny sweet tomatoes, red onion and quinoa in a lemon dill dressing. This restaurant, tucked away on a corner of Savannah's historic district, is 100% vegan and feels like fine dining. Their focus is mushroom-based, foraged by the chef-owner and the menu changes weekly based on his finds and inspiration. I feel lucky to have experienced this, that a dish like this is possible. Just strolling in on a random weekday and being blown away by such a delicately beautiful plate of food.
