Summer Vegan Salad

Very refreshing. Veggies were crisp and fresh. The chickpeas does help to bulk it up a little.

Loved how FRESH this was. So colourful and so many textures! Thought it was quite unique to combine fruits like mango and pineapple chunks with veggies like beetroot, avocado, greens, etc. The pesto dressing really brought it all together. A refreshing, light and tasty meal! Perfect for 2 to share when paired with their tempeh salad 😉
