Stuffed Aubergine

Another gorgeous vegan dish from Rick’s, packed full of flavour and gorgeous veggies, I especially loved the aubergine (underneath the veggies in this pic). Really well spiced but not too hot.

Back in CT after 3 weeks! Had dinner out with some tourists and had this dish. Nutrition and taste seemed good but quite overpriced... #capetown #southafrica
