Sofritas Tacos

This is my go-to dish at Chipotle. I put brown rice (healthier than white rice), black beans (pinto beans are spicy), sofritas (shredded tofu), fajita veggies, and lettuce. The tortillas are vegan! They are incredibly filling—they come with three, and two of them fill me up, so I save the last one for later. Sometimes I change it up and put all those ingredients in a bowl, burrito, or hard tacos (but I’m trying to avoid hard tacos because I have permanent retainers, so I opt for the soft ones).
