Shroomami Curry Rice

This looks like a real #hotmess, and trust me it was good 🤤 They used healthy #rice and the #greencurry felt very lean and "low-fat", definitely not the kind made from thick coconut cream 😂 This created a bit of leeway for the #shimeji #mushroom and the #aubergine to be stir-fried lightly in oil ☺️ My favourite part might still have been the #firmtofu though - delicious! The fiancée's ClassPass subscription allowed her to pick meals from here and pay with credits, so this ended up being date night 😅
