First time trying Harvest Beat in #seattle. This #allvegan #finedining restaurant has a changing #tastingmenu based on #seasonal #local produce. The menu changes every 4 weeks. It is about $130/person so on the expensive side but it is an experience in itself with the wine or elixir pairings. You eat all courses at the same time as everyone else in the restaurant.
The third course was a #roasted #delicata #squash stuffed with applewood #smoked #lentils and #leek fondue on basil preserved lemon puree topped witj herbed bread crumbs and finished with a pomegranate reduction drizzle.
The textures and flavors mixed very well together but the smoked lentils inside the squash were probably my favorite! They were delicious.
