Roasted Cauliflower & Chickpea Curry

A real tummy-filling curry, perfect for vegans who love the heat - a tad too spicy for me from the Thai red curry used. Found relief from the carrots' sweetness and the fresh tomato & onion sambal on top. The chickpea and roasted cauliflower were tasty. The steamed rice had the taste and consistency of sushi rice 😁 Apart from sushi, this was the only option on the menu for vegans.
