Ratatouille Salad

As very few restaurants are open on Mondays in Ghent especially at lunchtime, Le Botaniste has the competitive advantage of being one of the rare full vegan places serving food almost 7/7. The staff recommended this seasonal ratatouille salad and I followed their advice. I loved the combination and contrast of warm (the #quinoa and the deliciously spicy #ratatouille) and cold elements (the lettuce, kimchee, vegan #beetroot and soy based balls). The vegan #yoghurt and #curry sauce toppings were a bit less my cup of tea but still okay. 14,50 euros is a fair price. So I too can recommend this dish and this 100% #vegan restaurant for its constant high quality level, its friendly and helpful staff and its proudly showing off as a meat free 100% plant based zone. #veganlunch #veganrestaurant #healthyvegan #sustainablevegan
