This consisted of seasoned firm and chewy vermicelli rice noodles on top of a bed
of arcadian mix greens, and topped with fresh carrots, umami-rich Indonesian-style tempeh, cashews, cucumber, and scallions. Served with a side of Hiyashi Chuka dressing and kimchi. This was full of flavor, refreshing, and satisfying.
