This is the first vegan dish added to their "mains" section of the menu and
it does not disappoint. It has perfectly cooked butternut squash, spinach and mushrooms, and the breaded tofu and couscous are lightly spiced with turmeric. It has excellent nutritional values without sacrificing the taste. To make it perfect, I would add a sauce or some more spices to give it an extra kick of flavour.
