This was one of the go-tos when I was in Montpellier. Falafels with a tahini
dressing, with a tasty salad, pickled veggies and a super yummy smoked red pepper hummus. I believe all housemade. The falafels were so good and the hummus was definitely my fave. The pita was also soft and lovely. Large portion as well.

Green lab is a chain of vegetarian cafes: with a couple in Montpellier and one in Lyon. Mainly falafels and houmous, a variety of hummus flavours too. Either as Salads and in pita. They also do hummus on fries, etc.
Plenty of vegan options, just some items have tzatziki or fromage of some sort: I think they could quite easily go the full ve. This branch does get quite busy, but usually the folks running the place are helpful. Menu in French but you might speak with them in English if you prefer.
