Yuba, also known as tofu skin or beancurd skin, is widely used in Chinese, Korean
and Japanese cuisine. It is made from #soy , and obtained through a very elaborated process 😅
It has a unique texture, that I love, and a delicious taste. Honestly, I wish it was easier to find in Italy 😭
Luckily they make an amazing #yuba here at Giapp-one: it is stewed in a miso based sauce (the final result is creamy and rich), with vegetables and #shiitake mushroom and it is served with rice.
Filling and absolutely delicious. My favorite dish to get every time I come here 🥺
