Eggplant Pesto Grill

This housemade pesto was spectacular 🌠Eggplant wasn't too soggy, sweet potato mash was sublime. Fried capers tops it off!! A protein side would've made this dish balanced. Would be cool to have a pasta with this pesto on the menu!
