I've been meaning to trek out to Minnetonka to try this new all-vegetarian Vietnamese restaurant. I was volunteering at the Minnetonka farmers market and thought this was the perfect opportunity since I was in the area! I was so happy that @jonok came out to enjoy this meal with me too!
This curry soup was so light yet still creamy. It is made with the classic coconut milk, but it also has the interesting addition of almond milk. This made it lighter and thinner than the curry noodle soups I've had in the past. This wasn't necessarily a negative though. Because this soup was thinner and lighter, it was wonderful on a hot day. This soup contains veggie chicken, onion, mushroom, taro, and sweet potato. The chicken had a nice soft but springy seitan texture and had a really great chick broth flavor. The rice noodles are served on the side with mint leaves, jalapeno, lime, and lettuce. This dish comes with so much food! And for only $15!
