Brinjal with Beancurd

Swimming in oil, as spicy as it looks, with bits of beancurd fried to a crisp standing in for where the lard cracklings and/or salted fish would be in the omni version of this dish. Fabulous. (Serving is considerably larger than what you see, I ordered this on Grab and re-plated at home)
