Blueberry Cheesecake

This restaurant’s desserts are all fully vegan! This made picking one super hard as they all sounded amazing. I am very happy with my choice though, as this was one of the best vegan cheesecakes I’ve ever had! The bottom was such a beautifully crisp and sweet butter-cookie crust. The cheesecake was the perfect texture and really resembled the nonvegan cheesecakes I remember, I have no idea how they got it so accurate, maybe tofu? It didn’t have a coconut or cashew aftertaste so I was really impressed. The blueberry compote layer on top was also divine and added such a nice tartness to a very sweet dessert. It was such a big portion as well! #sweettooth
