Blonde miso ramen

This dish is vegan without the egg, vegetarian with. And either way, it’s delicious! The noodles are thick and plump and taste fully like a ramen. The kale tastes very fresh and absorbs the broth flavor, nice and soft but with a bit of crunch still. The chickpeas are still complete and not at all mushy; they add a great second layer of flavor to the soup and noodles. There’s jalapeños in the soup, so if you want some extra heat, it’s perfect, and if you eat the soup without the jalapeños, it’s not very spicy. It seemed like the perfect combo and the dish wasn’t missing anything. #MITVegan
