This was a collaboration between Boxcar Pizza and Plant Based Papi for the Circle V Portland Vegan Food & Drink Festival, which benefitted Equitable Giving Circle and Portland Immigrant Rights Coalition. It consisted of a slice of Sourdough pizza with smoky slow-roasted and shredded king oyster 🍄🟫 to mimic tender BBQ short ribs, charred sweet 🌽, thin-sliced red 🧅, and fresh cilantro over a rich, and house-made vegan BBQ sauce. It was delicious and creative and a wonderful pooling of the talents of the two businesses.
