We had some amazing pizza last weekend from the Vegan Pizza Land food truck. We live near Northampton, Massachusetts, and this area used to be all paper mills along the river, but now they're all abandoned. Some of the buildings have been turned into artist's lofts, dance studios, microbreweries, etc. The pizza truck is parked in the alley behind the Abandoned Building Brewery. It's just an alley, but they've made it really cute with picnic tables, umbrellas, and big barrel pots full of flowers. You can sit in the back, order pizza, grab some beer inside, or sit inside and get pizza brought to your table from the truck.
The pizza itself was some of the best I've had. The crust was thin and crispy, and it held up well to the toppings. The pictures don't do it justice. We tried two pizzas, and my favorite was the one topped with housemade cashew cheese, shishito peppers, crispy tofu bacon, (which was delicious), and some Chipotle crema. We also got some salads, which weren't great, but we're definitely going back for more pizza!
