Although it’s listed as the 4th item on the 10-course vegan degustation menu, it was the third dish to come out.
This had a wonderfully smokey, charred flavour. The shiitake meat in the middle was the most tender, succulent, rich piece of mushroom flesh you can think of. There was a little heat from the chilli to top off the super tasty, earthy, umami, meaty mushrooms that were perfectly cooked with a texture of just enough bite without being chewy or rubbery at all. Delicious.
