
At first glance, I thought that a lot of this looked a little too raw and healthy for me to feel fulfilled (the shredded carrots, mung beans, cucumbers, tomatoes, and other greens 🥕🥒🥬🍅🥑), but it turned out that they really brought out the best of the other prepared samples, the tofu scramble, the tofu poke, tvp, kale, and hijiku (a sea vegetable). I would take each bite with some of the rice and a raw veggie, which added a nice crunch.I felt very satisfied afterward, also mentally, knowing that I had a healthy lunch.

Besides this colorful dish, I’m also including a rainbow at 3 Tables, a popular snorkeling spot here in the North Shore.
