Some forms of vegan meat are pretty much perfect. Burgers, sausages, and chicken have really peaked. They can only get so much better. Bacon, however, has had a ways to go. It must be the fattiness that makes it a bit harder to replicate. I was very intrigued when I saw this new product at Whole Foods. This bacon is made from mushrooms! They're very simple and coated in coconut oil for that saturated fat. They're really smoky and I thought the flavor was great. I'm always afraid of over-cookoing vegan bacon because many brands get super brittle and burn easily. I ended up not cooking these as much as I probably should have. This made the texture a bit hard to bite through. I still thought they were great! They don't really have any nutritional value, but they're a nice flavor and made a great BLAT sandwich. I would get these again if I saw them on sale!

Does look it can be crispy if fried longer. I personally really like Lightlife bacon. It hits the spot for me for a BLT.
